Welcome Home!  Grey Mullet is one of the most significant local food at Tai Sang Wai. Let’s get ready your five senses to experience a life of ‘Fish in the Pool’. The map will guide you to walk and taste the growth environment of grey mullet with the first-person perspective.

稻風

 The Flavor of Rice

這道菜是一碟類似多士的小食,主要食材就是麵包、豆腐渣等,還有一些公仔麵與米粉。尤如烏頭魚平日的食糧,吃到一種食糧雜亂的感覺。

This dish is a plate of toast-like snacks. The main ingredients are bread, soy pulp, as well as some instant noodles and rice noodles. She hopes the participants taste the food that grey mullets eat, of which an array of flavours intermixes.

這道菜表達了烏頭魚在魚塘裡剛剛出生的狀態。碟子裡會有一塊藍色的冰,冰是由薄荷葉、青檸及一些大生圍時令水果作為材料,冰慢慢融化後,需要用飲管逐點逐點吸食著藍色的水,如同烏頭魚吸水的動作。

 

This dish represents the state of a newly born grey mullet in a fishpond. On each plate, there is a piece of blue ice made of mint leaves, lime, and some seasonal fruits. As the ice slowly melts, the participants have to use straws for drinking the blue water, allegorising the process of grey mullets drinking water.

這道菜是是一碟甜品——一顆棉花糖,它旁邊擺了一支火柴,參加者劃火柴後,可以用火光把棉花糖微微烘燶再進食,一咬下去,柔軟的棉花糖裡面竟有一些未烹煮的公仔麵。這份味覺衝擊令人想像表面柔軟甜美的東西,原來裡面會有硬物、又會受到火的傷害,藉此表達人為活動對大自然的傷害行為。

This dish is dessert —— a marshmallow with a match next to it. The participants can light the match and bake the marshmallow slightly before eating. Inside the marshmallow is some uncooked instant noodles. She hopes that the impact of taste will prompt the participants to imagine things that are soft and sweet on the surface can be hard inside and be burnt by fire. With this dish, she hopes to represent how human activities harm nature.

製作花絮 Behind The Scenes

飛魚

Flying Fish

這道菜是利用烏頭魚鹹魚粒及各種配料自行製作的鹹魚飯團,飯團成型後,再放在爐裡稍稍加熱,能夠品嚐到烏頭魚的味道。

This dish includes salted grey mullet dices and various ingredients. Participants need to use the ingredients to make a salted fish rice ball. After that, the rice ball will be heated in the oven and the participants can taste the flavour of grey mullet.

污染

Pollution

這道菜是一個用烏頭魚魚湯雪藏而成的白色魚凍,魚湯沒有使用任何調味料,首先品嚐烏頭魚最原初的味道。然後自由發揮地把各種味粉混合起來,包括竹炭粉、綠茶粉、辣椒粉等等,再灑進一個魚型模具裡。最後會得到一種非常混亂的味道,表達烏頭魚在混濁的水質裡生活。

This dish is a fish jelly made with frozen grey mullet soup. The fish soup does not have any seasonings. Participants can taste the original taste of grey mullet. Then, the participants can add spices of various flavours and colours, including bamboo charcoal powder, green tea powder, chilli powder, etc. The participants can mix the spices freely and sprinkle them over a fish-shaped mould. The participants will taste an intricate flavour, to express that the grey mullets live in turbid water.

重生

Rebirth

這道菜是一杯楊桃梳打水。喝水後,曾經吃過的味道消失了,藉此表達一切重新開始。

This is a glass of star fruit soda. The drink will wash away all the flavours. Through which, metaphorise a new start for everything.
